Carrot Halva

This rich and satisfying dessert is simple to prepare, though it does take time and patience for the carrots to cook gently as you stir so that the correct consistency is achieved. You may substitute non-dairy “milk” for the 2% milk called for below.

yield: about 3 dozen pieces  |  prep time: about 50 minutes  |   resting time: 60 minutes


ingredients

  • 3 cups finely grated carrots (4-5 carrots)

  • 1½ cups 2% milk

  • ½ cup maple syrup or organic sugar

  • 2 tablespoons rice syrup

  • ¼ cup raisins

  • ¾ teaspoon ground cardamon

  • ⅛ teaspoon ground cloves

  • 1 teaspoon vanilla extract

  • 3 tablespoons ghee or butter (or 1 tablespoon ghee + ⅓ cup pureed yam)

  • ¼–½ cup toasted sliced almonds
