Crispy Cashew Coconut Cookies

These uncooked cookies could fool most into thinking they’re fresh from the oven, but instead they’re a raw cookie made crisp through the long, slow drying process. Adding vanilla to them is optional as it’s not a raw ingredient. It does give a slightly more complex flavor, but for pure raw foodies, you’ll have to skip it.

¾ cup raw cashews
⅔ cup dried coconut
2½ tablespoons maple syrup
2 level tablespoons coconut butter or oil
1½ tablespoons ground flax seeds
1 teaspoon vanilla
